We are excited to be launching our 4th restaurant at Therasia Resort for 2019. This vegetarian concept restaurant will be open from 1st June 2019 and only for dinner reservations.

The new restaurant will be headed up by Chef Andrea Vicario. Andrea comes with a wealth of experience and has recently returned from a stint in Australia.  While in Australia he worked as Chef de Partie at “Dinner” in Melbourne which is part of the Heston Blumenthal stable of restaurants. He used this experience to expand his knowledge of world cuisine, discover new ingredients, different dietary habits and experimental cooking methods. He will be bringing some of his talents to the new restaurant at Therasia.

Signature dishes of the new restaurant:
Mare (sea) – this dish is thought to be reminiscent of the Vulcano sea.
Made with puffed black potatoes to remind one of the volcanic soil. Avocado purée and parsley powder to remind the Vulcano vegetation and the samphire to bring to the mouth of the customers the taste of the sea.

Tartare di pomodoro – tomato tartare
This dish is made just with ingredients from Vulcano island and the hotels own vegetable garden. It is made with tomatoes tartare, confit tomatoes cream and sun dried tomatoes cream and crouton seasons with capers powder, tomatoes powder and oregano to recreate the typical “pane cunzato” of the Aeolian island.

Where possible ingredients will be sourced locally from Vulcano Island and from the hotels own vegetable garden. So expect to see ingredients such as tomatoes, capers and aubergine in abundance.
